Thai Style Whole Fish
Make a marinade from:
½ c. Lime juice
¼ c. Fish sauce
1 c. Fresh coriander
Fill the cavity of the fish
with some chopped lemongrass, and a few kaffir
leaves. Place in a dish and cover with the above
marinade and leave in the fridge for at least
30 min.
For the sauce:
1 Sliced chilli
2 Tbl. Brown sugar
½ Red capsicum
½ c. Green shallots
¼ c. Lime juice
The marinade can be saved
and poured over the fish as garnish.
Fry the fish on a large fry
pan or grill, turning once until cooked. Add
the sauce in the last 10 minutes cooking them
together. Shreds of lime and lemon rind make
a nice garnish.
